Cassava Pancakes

  • 1 1/2 cups All purpose Cassava flour

  • 1 tablespoon baking powder

  • 1 teaspoon sea salt

  • 1 3/4 cups dairy free milk

  • 2 pasture raised eggs

  • 2 tablespoon melted coconut oil

  • 2 tablespoons chia seeds

  • 1 banana (optional)

  • 0ne tablesppon of raw honey

  • organic Maple syrup for serving

  • blue berries and strawberries for serving

  1. In a large bowl sift cassava flour, add baking powder chia seeds and salt.

  2. Add milk, eggs, and melted oil or ghee until there are no visible lumps. Let mixture sit for minutes

  3. Add in Wild blueberries.

  4. In a large griddle over medium heat melt some Ghee, avocado oil or coconut oil. Pour 1/4 cup of batter and once it starts to bubble, flip and cook and additional minute on the other side.

  5. Repeat with remaining batter and serve.
