Zoodle pasta
Ingredients:
2 Zuchinis spirilized
4 garlic cloves
1 shallot
10 cherrie tomatoes of mini herliom cut into 4
1 handful of spinach
2 tablespoon Avocado oil
1/4 cup chopped tomatoes (I use Jovial foods in a glass jar to avoid BPA in cans)
1 tablespoon dried oregano
1/2 teaspoon of tumeric
sea salt and pepper to taste
Directions:
Heat 2 tablespoons of avocado oil in a large pan or wok on medium (non toxic, of course, no aluminum).
Suate until translusant add garlic and saute for another few minutes
add in cherries tomates and sautee until tomatoes become softened.
Lower heat and add seasoning and zuchinni and saute until zucchini is softened
then add spinach and cook for a few minutes.
